Autumn is synonymous with warmth, comfort and well-being. With this season we put aside the cold meals of summer and welcome back the warm and more elaborate dishes, which are in tune with the arrival of shorter days and cooler temperatures.

At Maius, the versatility of our organic wines with DOCa Priorat makes them suitable to accompany dishes of any season. This time we present you three autumn dishes to garnish with our classic Maius Barranc de la Bruixa, a sure bet for a perfect meal!

Baked lamb with garnish

This is a simple, homemade dish and perfect to enjoy on a Sunday with a glass of Maius. For a sublime touch, we can accompany the roast with baked potatoes and seasonal vegetables such as pumpkin and carrots. The tannins in the wine react with the protein in the meat and both flavours are enhanced, making this a classic dish to pair with Maius Barranc de la Bruixa.

Mushroom risotto

An ideal way to turn mushrooms picked during the season into a complete and satisfying dish. Accompanied by the classic Maius, this dish reaches another level of deliciousness. The body and intense flavour of the wine combine with the risotto, without attenuating its flavour and texture. The minerality of the wine, however, is the key element that makes this pairing a resounding success.

Stuffed aubergines

In addition to being a seasonal vegetable, aubergine is one of the best vegetables to pair with red wine. For a different touch, we recommend adding lentils to the filling, along with onion, minced meat and fried tomato. The subtle smoky notes and the intensity of the wine make this pairing a well-rounded meal.
